  • Thai Ginger Soup

    I've finally purchased my Vitamix 5000 after drooling over the Thai Ginger Soup which I have seen (and tasted) during countless demonstrations but I've been unable to find the recipe anywhere.  I am thrilled with my machine, which I have had for two days but I am really impatient to make this soup.  Yesterday I successfully made ice cream and fresh hummous and I want to get cracking and make some more exciting recipes.  Please could you let me have the recipe.

    You are so right - it is a delicious soup and was the first recipe that I was hunting for - so here it is.....enjoy!!!!
     Preparation:

    1.Place all ingredients (except chicken and/or noodles) in Vitamix container in order listed. Secure 2-part lid.


    2.Select VARIABLE, speed #1. Turn machine ON and quickly increase speed to #10; then to HIGH. Run for 5 to 6 minutes or until steam escapes through the lid plug opening. Reduce to VARIABLE, speed #3.


    3.Remove lid plug and add cooked cubed chicken and/or cooked noodles through lid opening and run for an additional 5 seconds. Serve immediately.

    Ingredients:
    500 ml water
    1 small carrot
    1/2 stalk celery
    1/2 cm slice cabbage
    1 spring onion
    1 slice red pepper
    130 g cashew nuts
    10 g fresh coriander
    2 cm slice courgette
    1 thin slice lemon, peeled
    1/4 apple
    1/2 clove garlic
    1 cm slice ginger (to taste)
    1 vegetable stock cube
    170 g cooked, cubed chicken (optional)
    160 g cooked noodles (optional)
