This is a common question that I've often heard from those people new to soaking and sprouting nuts and seeds:
Why do my seeds sprout beautifully, but my nuts won't sprout?
Nuts don't sprout because they need their shell to sprout, as soon as we remove them from the shell they will not sprout. The only nut that will sprout outside of their shell are jungle peanuts, however they are not technically a nut, they are a legume.

There are two common thoughts on why the water and pulp are sometimes a pink or purple color. One is that they are old and decomposing; another is that the formaldehyde that they are dipped in before they are shipped to the US somehow leaks into the coconut. It is a long journey by boat from Thailand, so they do that to prevent the outside from molding. Matt Amsten tested the Thai coconut. He found no traces of formaldehyde in the coconut water or pulp that he tested. In either case, I would recommend returning it to the store in exchange for a new one.

Try this Carob Maple Shake I just made
2 large frozen bananas

3 Tbsp. carob powder
8 drops of clear stevia liquid
1/2 tsp. maple flavoring
Combine all of the above in the vita-mix and advance from low to high speed, running blender for about 15 seconds or until silky smooth. Makes 1-2 servings, if you want to share! Yummy!
