Vita-Mix in the news again. Traveling culinary expert, Rebecca Wheeler, of Chicago, searches the world for ethnic recipes to bring back and share with her cooking classes and others who take interest in what she does. Here's a recent article written in the Cleveland Examiner that featured her recipe for Golden Market Gazpacho
This is the easiest jam recipe you'll ever make! Mix 2 cups organic berries (I've used strawberries, blueberries, mulberries and blackberries) of your choice with 6 dates (removing the pits) to your Vita-Mix and blend on high speed until smooth. This will stay fresh in the refrigerator for about 7-10 days. I've also used apples and cinnamon, mangoes and pineapple. Yummy too! Have fun with it!
My Vita-Mix is on order but I haven't got the email confirming its been shipped yet so I might just have to call and check on it LOL. I'm so excited I can't hardly wait until it gets here, I'm getting the 5200.
I have been watching all the videos for weeks now and I'm convinced this is the greatest blender type product thats on the market today and I don't even have it yet. I've read hundreds of reviews and have yet to find a bad one which is very rare to say the least. I've even read a few who are still using the same machine they bought over 20 years ago wow!
I have a problem eating all the nutritious leafy green veggies that we need in our diet so I'm thinking the Vita-Mix will help me to achieve eating them. When I saw and read that if you add some fruit to the greens you won't be able to taste the greens thats what sold me on the Vita-Mix its just what I need. I'm so excited, oh wait, I already said that didn't I? Well, I am!
I also want to lose a few pounds, I don't have much to lose but its my hope that by making green smoothies and abstaining from making all that good ice cream I've seen in the videos I think I'll lose the weight.
If anyone has any weight loss tips please post them and any combinations that work best toward that goal.
I just bought a vitamix after years of wanting one in hopes of leaning more to a raw vegan diet. I also bought a large large bag of organic grapefruit and oranges to make smoothies. I left the peel on the grapefruit in my first attempt, and I couldn't drink it...and I am pretty open even to the most bitter tastes...I left the peel on for the nutrients it has...so I tried for the orange. It was better, but still not the creamy sweet fresh orange taste I was hoping for...so...does anyone out there use the whole fruit when making smoothies, or do you peel your citrus, and add greens for added nutrition??? Recipes? Also, what about Protein...I am adding some natural whey powder...any other ideas?
My question is about the so-called “toxic ‘ things found in raw leafy green veggies, like the oxalic acid in spinach. How much is too much of this stuff to eat? I’m feeling well and the drinks are tasty. Thanks for the help.

Hi Terry,
There are small amounts of natural toxins, called alkaloids, on all greens. However, each green contains a different alkaloid, so generally, if you eat a variety of greens you won’t have any problems. Some scientists believe that these alkaloids are there to prevent us from eating the entire crop , so that there will always be more for future generations.
You will find out, naturally, how much is safe to consume. When you eat a green in moderation it tastes great, but when you’ve had enough, your body will tell you by the taste. It generally starts to taste bitter, can cause nausea or you may notice your mouth becomes very dry. This bitter reaction is very obvious to most people when they eat the stronger greens, like chard, collards, arugula and dandelion.
Sunflower greens and spinach taste very mild to most people until their body has had enough, then they tend to make the mouth feel very dry. Listen to your body and only eat the amount you need, then go on to a new green for your next meal.
You’ll notice that when you blend greens in a recipe with lots of other ingredients (like in greens smoothies or blended salads) your body doesn’t always tell you when you have had enough. This is because your body is picking up on all the different foods at one time and it is confusing. I recently worked with a woman who was consuming large amounts of spinach every day in her green smoothies.She suddenly started feeling very light-headed and nauseous, she said she felt like she was going to faint all day long.When she stopped eating the spinach and substituted it with a different green in her smoothie every day, her dizziness went away.I suggest typically adding the amount of greens you would comfortably eat in a salad when making a smoothie, energy soup or blended salad.
It is very important to rotate your greens daily, which is the natural way to prevent any problem with over-consumption of one green.If you eat a new green every day, you’ll typically rotate at least 7 greens in your diet.The typical greens that are available to most of us, are romaine, red or green leaf lettuce, spinach, Swiss chard, kale, Bibb lettuce and bok choy.The highest quality greens are those that are dark green in color, organic and locally grown.
Add small amounts of the stronger varieties, such as dandelion, arugula, mustard greens, beet greens, etc.

My favorite green drink is one I drink at work using our Green powders, carrot powders, and beet powders. It's the easy way to get an organic drink every morning with live enzymes, even if you don't happen to have the fresh produce on hand.
update. had my vitamix about a month now, maybe. I love it. I learned that turning from variable slow speed to high should not be immediatly. I slowly do it making sure it chops whatever big chunks of food I have and slowly move it to high speed. I tried making the brocoli cheese soup but somehow missed that the brocoli was to be steamed first. I was having so much fun that you can puree raw brocoli with a liquid but it has a very strong smell and when i figured out it was supposed to be cooked I tried simmering it in a pot but couldn't seem to cook it down. will do better next time. made the party potatoes and it was sooo easy to chop the raw potatoe with the wet chop method. I can't wait to try cole slaw.
Here is a recipe for Pinto bean soup. I just tried and thought it tasted a little bland and there was too much onion taste to it. I am goign to try it with less onion.
6 cups (1.4 L) low sodium chicken or vegetable stock
Place all ingredients in Vita-Mix container in order listed. Secure 2- part lid. Slect VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run for 5 to 6 minutes or until smooth. Serve immediately.

I have heard of the many benefits of drinking white tea. I don't usually get around to having cups of tea. So, I decided to brew tea and use it as the base for my afternoon smoothie.This way I get the benefits without drinking it alone.
I made my first green smoothie this morning and I like this stuff! I used spinach, collards, frozen pineapple, apple, banana, agave syrup, flax oil, fresh ginger, and hemp hearts. It tasted pretty good for a first effort. Can't wait to try some more combinations.
I think my biggest challenge is to find refrigerator space for all those greens. I had two huge bags and used up half of it for one batch. Does anyone have any ideas about this? Other than going to the market every two days?
Hey everybody! Now that I have my Vita Mix blender I'm enjoying all the smoothies and better health, however, I am having a real hard time tryinng to make bread from scratch. My bread refuses to rise and it turns out like a brick in a pan. What am I doing wrong? I followed the video instructions and understand the delicate balance of tempature and yeast, but I can't seem to get it right! I bought the dry blade grinder specifically to make homemade bread, so if there is anybody out there that can help I'd really appreciate it!
I wanted to post this separately for those that are Gluten-Free who may not have read the Banana Bread blog.
I normally only submit raw food recipes and info, but today I'd like to share my "secret" recipe for a gluten-free flour that I formulated a few years ago when I was teaching gluten-free classes. "René’s Gluten-Free Flour"-- combine: 4 cups brown rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour, 1/2 cup cornstarch, 1/2 cup garfava flour, 1/4 cup sorghum flour.
You can save money by grinding the brown rice yourself with your Vita-Mix.
People who are gluten intolerant must also beware of oats, because most are produced on equipment that wheat and other grains touch. I have links for two sources of gluten-free oats on my Resource page at my website, www.reneoswald.com. Also, all 350 recipes in my new book are gluten-free. I'm very overweight (5'3, 175bs.), worked as an accountant for 40 years (sedentary), and have fibromyalgia which means I can't exercise except in moderation. Now I'm paying for an unhealthy diet, carb. addiction, sedentary lifestyle, etc. It's late I know, but I just bought a Vita Mix, and want desperately to feel better, improve my health, and lose weight. I think the Vita Mix raw foods addition to my diet can help me achieve this. Is there anyone who has been in my position, at my age (65) and achieved these goals? If so, please tell me what I need to do
My kids saw a demonstration of Spinac Ice Cream at Costco and are begging me to make it. I was hoping it would be in the recipe book. Does anyone have a recipe kids would like?
I just made the Cream of Spinach Soup and it was delicious. I followed the recipe in the Vita-Mix book and just added extra salt and pepper to taste. Don't be scared of the neon green color! Next time I will chop in some potatoes or other veggies just to give it some texture. I'll definitely make this again.
Today starts a real journey, not one like Mr.Easyway a "do it for me pill" won't work. I purchased my new red 240 mph. Vita Mix Blender and I can't wait to start the food experiences of a new direction in controlling my diabetes. With my new Red Zoomer and some fruits and vegetables I am ready to go.

1st day got vita mix
update. had my vitamix about a month now, maybe. I love it. I learned that turning from variable slow speed to high should not be immediatly. I just made the Cream of Spinach Soup and it was delicious. I followed the recipe in the Vita-Mix book and just added extra salt and pepper to taste. Don't be scared of the neon green color! Next time I will chop in some potatoes or other veggies just to give it some texture. I'll definitely make this again.

I made my carrot juice again this morning,but this time i added an orange.Not bad but going to keep trying with other veggies.
