Chef Scot Jones of The VegiTerranean in Akron (Chrissy Hynde's of The Pretenders restaurant) (and of Fideli's in Canton) presented a lecture, demonstration and tasting of vegan and vegetarian dishes along with information on sustainable living and farming, changing to a healthier lifestyle, stocking a vegetarian pantry, changing to healthier ingredients in your favorite recipes, getting ready for the superbowl vegan style and tasting and talking about food and wine in an entertaining way.
This event was sold out. Vitamix was promoted and recommended by Chef Jones personally as the blender of choice for preparing healthy foods.Chef Jones was also featured in Tal Ronnen's "The Conscious Cook" cookbook which mentions the Vitamix Blender as a staple in Chef Ronnen's kitchen.

Vitamix was again a sponsor of the annual WGAR concert "Guitars for Girls,” a benefit fundraiser concert for the Susan G. Komen Foundation for breast cancer research, education, screening and treatment which was held October 27, 2009. Cleveland’s country music station, WGAR, joined Cleveland Clinic, VitaMix, and Lorain County Community College to help raise nearly $28,000 for the Komen Foundation! Entertainment consisted of an up-close and personal acoustic set with 3 country music stars.

Vita-Mix behind the scenes at the Jason Mraz Concert- Cleveland, OH - August 18, 2009.
Mraz and crew use the Vita-Mix machine on tour!
We recently caught up with singer/songwriter, Jason Mraz on his tour stop through Cleveland Ohio. Did you know that Jason uses a Vita-Mix machine on tour? He does. In fact, we found out that Jason’s Vita-Mix machine gets quite a work out! Band members and the tour crew all use the Vita-Mix machine to make what they call “Green Drinks”. I am talking this is one serious looking green drink! It was so dark in color!
We were invited to go backstage into camp Mraz to see just how
instrumental the Vita-Mix machine is in helping to keep the Mraz crew healthy and energized while on tour. 
When we got to the “Vita-Mix” area, the Vita-Mix 5200 was already in use by Mraz’s keyboard player, Eric. He told us how much he loved the Vita-Mix and how he drinks several green drinks a day for energy. Eric also told us that the Mraz crew also mixes in Vitamineral Green supplement powder with their smoothies. Eric told us that the power of the Vita-Mix is unbelievable. “I‘ve burned through several blenders with my smoothies, I’ve got to get one of these for my home, it’s really a powerful machine.”
Mraz is mostly vegetarian and told us he also will eat fish for lean protein. Green drinks are a huge part of Jason’s regimen. Not only was Jason very down to earth and a pleasure to talk with, Wendy and I both though it was one fantastic performance by the highly regarded musician. American Idol finalist, David Archuleta, uses a Vita-Mix machine while on tour. We had the chance to catch up with him at his show yesterday in Cleveland, Ohio!
For you American Idol fans and fans of David Archuleta….did you know that David loves to be healthy on the road? He does….he and band member Kendra help each other to eat healthier while on tour by making delicious whole food treats in their Vita-Mix 5200!

I had the unique privilege to partake in the Running America project when they came trekking through my lovely home state of Ohio. I figure not much is happening in Southern Ohio, so I may as well go shake things up a bit, right? In a moment of pure kindness, I decided to treat the crew like lab rats with my cooking. I whipped up a couple loaves of whole-grain banana bread and some homemade nut butter for Charlie and Marshall. I packed this up along with some running clothes, shoes and for some reason…hairspray. (That’s a little like packing a hairdryer to go camping.) I got to work as ‘kitchen slave’ for those few days, preparing food for the runners, their support crew, and the production crew. (I volunteered for this, it was NOT asked of me, as I thrive on self-punishment, I think.) It was a bit of a challenge in that I had a bunch of food but NO KITCHEN. Yes, I had an RV (for 20 minutes here and there), a hotel with really limited resources, some crock pots (don’t use these in hotels…you get yelled at) and my saving graces and REAL heroes of this trip…the Vita-Mix machine and a corkscrew. Yes, a corkscrew.

A side note… I read a blog a little while back written by well-respected culinary authoritarian, Michael Ruhlman. It was called, “My Favorite Kitchen Gadgets”. (http://blog.ruhlman.com/ruhlmancom/2008/04/my-favorite-kit.html) Disappointingly he does NOT include what I now call MY quintessential kitchen ‘gadget’… the dual-lever style corkscrew.
This little sucker got a workout and saved me time and time again. It doesn’t just serve as a wine opener, but it served as my kitchen knife! Michael, you may want to rethink “THE CORKSCREW” …the kind with that itty-biddy knife attached. I used it to prepare pot roast, carve chickens, pare vegetables, make smoothies, make salads, slice bread, make sandwiches, make dessert, prep salmon…all for 20+ people. I gotta say…I will never travel again without it.
You may be wondering where the Vita-Mix fits in? It’s not just a kitchen tool and a workhorse…it’s so much more to me than just that. It’s my sous-chef and my right arm. It’s the piece of equipment that helps me plan my menu. It’s the driving force behind ‘what’s for dinner’. It made sauces, smoothies, fondue, flour, bread, nut butter, gravy and ice cream! It made liquid steak! (Cringe) My recipes are below.
The experience was not at all as I expected but more inspiring than I could have imagined. I had the opportunity to crew with Charlie for one day, and Marshall another. Learning how it feels to drive ahead of your athlete, sit and wait and be ready to feed and water them feels much like tending to livestock. It’s odd, because it takes you to the core of what sustains a human being. Hydration and nutrition become completely fundamental, something that we as American’s abuse and take for granted. Realizing that their bodies are machines that need fuel for performance, like a racecar needs fuel, is eye-opening.
So I would love to admit that I’ve staved off all bad habits of occasional chocolate or eating that extra bite just because it’s yummy, but I’ve not. I’m working on it, but the inspiration I’ve gained is in the area of physical fitness and endurance athletics. On the whole, I really get the nutrition part of healthy living. In fact, some of my friends think I’m a bit fanatic. But running alongside Marshall and having the opportunity to ask him questions about motivation, discipline and sanity was revealing to me. I hope everyone can experience something like this at some point in their lives.

RECIPES: (keep in mind these are not low fat nor low calorie as their needs are different than most people. I was being lunch lady to endurance athletes.
Banana Whole Grain Bread:
2 cups flour ground fresh from a blend of quinoa, oats, and wheat berries
3 scoops (soy) protein powder
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp salt
(blend these in large mixing bowl)
Combine the following wet ingredients in Vita-Mix container on High Speed for 15 seconds:
½ cup sugar (brown sugar works too)
2 T light olive oil (or veg or canola)
2 eggs
3 bananas
2 T soymilk
Combine the wet mixture into the dry mixture with a fork.
Pour into a prepared 9 x 5 loaf pan (spray with cooking spray), and bake 1 hour @ 350.
Macaroni N Cheese:
½ lb sharp cheddar cheese, in chunks
1 ½ cups milk (soymilk)
½ cup raw carrots
¼ cup fresh ground flour
½ block firm tofu
Salt to taste (1/4-1/2 tsp)
Place all ingredients in container. Let sauce run on High speed about 4 minutes until the pitch of the machine changes and it gets thick. Pour over cooked pasta.
Chocolate Fondue (a fav of Charlie’s!)
8 oz dark chocolate, 65% cocoa
1 cup heavy cream (not healthy, I know)
2 T butter
1 tsp vanilla
Run on High speed, using tamper until it begins to warm up. Let run 1 ½ to 2 minutes.
Serve w/fresh strawberries for dipping.
Chocolate Peanut Butter Banana Smoothie (loaded with calories for the runners)
1 avocado
4 oz dark chocolate
4 ounces whole nuts (peanuts)
1 banana
2 cups soymilk
Squeeze of honey or agave
2 scoops (soy) protein powder
1 cup ice
Place all ingredients into Vita-Mix container and run on High speed for 60 seconds, using tamper. If too thick, add more milk.
Mango-Strawberry Ice Cream
½ lb frozen mango (1/2 a bag)
½ lb frozen strawberries (1/2 a bag)
¼ cup honey, sugar or agave
1 cup soymilk
1 scoop (soy) protein powder
Place all ingredients into Vita-Mix container and run on High speed for 45 seconds using tamper.
Pumpkin Pie Smoothie
½ can plain pumpkin
¼ cup honey, sugar or agave
½ tsp pumpkin pie spice
½ package instant vanilla pudding mix (the small box)
2 scoops (soy) protein powder
1 tsp vanilla
3 T cream cheese or soy cream cheese
1 cup soymilk
1 cup ice cubes
Place all ingredients into Vita-Mix container and run on High speed for 60 seconds using tamper.
For a real “pie” feel and flavor, stop machine, add 3/4 cup of animal crackers or graham crackers to the container, replace lid and turn on variable speed 5 to mix for a few seconds.

USDA MAY SOON RECOMMEND A MORE PLANT BASED DIET, Less Meat.
New guideline recommendations were released yesterday (June 15, 2010) by an advisory committee that calls for drastic changes in the way we eat and this is great news for Vitamix.
Once the recommendations are official, the USDA Food Pyramid chart will shift toward a more plant- based diet that focuses on nutrient-rich rather than energy-dense foods. Here are the main recommendations:
Vitamix customers are already aware of the benefits from eating whole foods and having a larger plant based diet. Most Vitamix recipes are mainly fruits and vegetables—the Vitamix blends them into delicious whole food recipes in only minutes and the Vitamix makes it easy. Vitamix expects changes in the new guidelines that call for a shift to a more plant-based diet will be good for sales as people will begin to look for tools to help make the plant based diet more convenient for themto acheive.

The Dietary Guidelines were first published in 1980 and are mandated by Congress to be reviewed, updated and released every five years. The Dietary Guidelines contain the latest, science-based nutritional and dietary guidance for the general public. They are the foundation for federal nutrition education and promotion programs, as well as the basis for the federal food assistance programs.

You may have seen the Vitamix featured on The Martha Stewart Show today February 22, 2010! We are always so excited to be on Martha she just loves the Vitamix machine.
Martha was making soup today in her Vitamix machine. What was really cool to see was that on part of the segment, Vitamix President, Jodi Berg, was featured. Jodi was a guest in the audience so Martha asked her what her favorite soup recipe was. Jodi told Martha that her potato apple soup has always been a big hit!
Vitamix was also the featured give-a-way today on the Martha Stewart Show. The audience members all received vouchers for a Vitamix machine!
Here is the recipe for Jodi’s favorite soup mentioned on the show.
2 medium size tomatoes, about 1 1/3 cups
1/2 raw zucchini, about 1 cup
1/2 medium raw yellow squash, about 1 cup
1/2 cooked sweet potato, about 1 cup
1/2 large carrot
1/2 apple
1/2 cups hot water
2 vegetarian bouillon cubes
Instructions:
1. Place all ingredients into the Vitamix container in the order listed and secure lid.
2. Select Variable 1.
3. Turn machine on and quickly increase speed to Variable 10, then to High.
4. Blend for 2-3 minutes or until desired consistency is reached.

Green Monster Cocktail (provided by Vita-Mix Demonstrators)
Start with something light to cover the blades - 100% Welch's or Dole's white grape or banana/orange/pineapple frozen fruit juice. (Anything light in color). I use green grapes and water (about 10 grapes and 2 cups of water).
Add couple of baby carrots (or regular carrot)
1 cup spinach
1 - 2 large leaves of Swiss Chard (my change to original recipe)
1 banana (peeled)
orange (peeled - but leave the white stuff on)
a large slice of pineapple with core
a little squash or cabbage (optional)
half an apple with peel
a whole peeled lime (I actually use two and you can just take the juice too)
large piece of ginger peeled (my change to original recipe)
2 cups of ice
splash of honey on top (or Agave Nectar)

We had a 75th birthday for my father in law this weekend, therefore we strayed from the simply Vitamix juicing we have been doing.
We used our Vitamix to make the Celebration Cheesecake and the Amaretto Peach Sorbet for his "birthday cake". Absolutely wonderful. I believe my mother in law was so amazed by the ease of use, recipe and clean up she is on her way to purchase one for herself. She was very impressed by the recipe book.
Totally recommend these two, either individually or together. Beautiful simplicity, easy to follow recipes, outstanding results.
Question of the week:
My question is about the so-called “toxic ‘ things found in raw leafy green veggies, like the oxalic acid in spinach. How much is too much of this stuff to eat? I’m feeling well and the drinks are tasty. Thanks for the help.

Hi Terry, There are small amounts of natural toxins, called alkaloids, on all greens. However, each green contains a different alkaloid, so generally, if you eat a variety of greens you won’t have any problems. Some scientists believe that these alkaloids are there to prevent us from eating the entire crop , so that there will always be more for future generations. You will find out, naturally, how much is safe to consume. When you eat a green in moderation it tastes great, but when you’ve had enough, your body will tell you by the taste. It generally starts to taste bitter, can cause nausea or you may notice your mouth becomes very dry. This bitter reaction is very obvious to most people when they eat the stronger greens, like chard, collards, arugula and dandelion. Sunflower greens and spinach taste very mild to most people until their body has had enough, then they tend to make the mouth feel very dry. Listen to your body and only eat the amount you need, then go on to a new green for your next meal. You’ll notice that when you blend greens in a recipe with lots of other ingredients (like in greens smoothies or blended salads) your body doesn’t always tell you when you have had enough. This is because your body is picking up on all the different foods at one time and it is confusing. I recently worked with a woman who was consuming large amounts of spinach every day in her green smoothies. She suddenly started feeling very light-headed and nauseous, she said she felt like she was going to faint all day long. When she stopped eating the spinach and substituted it with a different green in her smoothie every day, her dizziness went away. I suggest typically adding the amount of greens you would comfortably eat in a salad when making a smoothie, energy soup or blended salad. It is very important to rotate your greens daily, which is the natural way to prevent any problem with over-consumption of one green. If you eat a new green every day, you’ll typically rotate at least 7 greens in your diet. The typical greens that are available to most of us, are romaine, red or green leaf lettuce, spinach, Swiss chard, kale, Bibb lettuce and bok choy. The highest quality greens are those that are dark green in color, organic and locally grown. Add small amounts of the stronger varieties, such as dandelion, arugula, mustard greens, beet greens, etc. See page 165 of our book, “Transitioning to Living Cuisine” (or in the Level VI eBook on page 14) to read what happened when my husband, Allan, and I ate too many buckwheat greens.
