Mraz and crew use the Vita-Mix machine on tour!
We recently caught up with singer/songwriter, Jason Mraz on his tour stop through Cleveland Ohio. Did you know that Jason uses a Vita-Mix machine on tour? He does. In fact, we found out that Jason’s Vita-Mix machine gets quite a work out! Band members and the tour crew all use the Vita-Mix machine to make what they call “Green Drinks”. I am talking this is one serious looking green drink! It was so dark in color!
We were invited to go backstage into camp Mraz to see just how
instrumental the Vita-Mix machine is in helping to keep the Mraz crew healthy and energized while on tour. 
When we got to the “Vita-Mix” area, the Vita-Mix 5200 was already in use by Mraz’s keyboard player, Eric. He told us how much he loved the Vita-Mix and how he drinks several green drinks a day for energy. Eric also told us that the Mraz crew also mixes in Vitamineral Green supplement powder with their smoothies. American Idol finalist, David Archuleta, uses a Vita-Mix machine while on tour. We had the chance to catch up with him at his show yesterday in Cleveland, Ohio!

I had the unique privilege to partake in the Running America project when they came trekking through my lovely home state of Ohio. I figure not much is happening in Southern Ohio, so I may as well go shake things up a bit, right? In a moment of pure kindness, I decided to treat the crew like lab rats with my cooking. I whipped up a couple loaves of whole-grain banana bread and some homemade nut butter for Charlie and Marshall. I packed this up along with some running clothes, shoes and for some reason…hairspray. (That’s a little like packing a hairdryer to go camping.) I got to work as ‘kitchen slave’ for those few days, preparing food for the runners, their support crew, and the production crew. (I volunteered for this, it was NOT asked of me, as I thrive on self-punishment, I think.) It was a bit of a challenge in that I had a bunch of food but NO KITCHEN. Yes, I had an RV (for 20 minutes here and there), a hotel with really limited resources, some crock pots (don’t use these in hotels…you get yelled at) and my saving graces and REAL heroes of this trip…the Vita-Mix machine and a corkscrew. Yes, a corkscrew.

A side note… I read a blog a little while back written by well-respected culinary authoritarian, Michael Ruhlman. It was called, “My Favorite Kitchen Gadgets”. (http://blog.ruhlman.com/ruhlmancom/2008/04/my-favorite-kit.html) Disappointingly he does NOT include what I now call MY quintessential kitchen ‘gadget’… the dual-lever style corkscrew.
This little sucker got a workout and saved me time and time again. It doesn’t just serve as a wine opener, but it served as my kitchen knife! Michael, you may want to rethink “THE CORKSCREW” …the kind with that itty-biddy knife attached. I used it to prepare pot roast, carve chickens, pare vegetables, make smoothies, make salads, slice bread, make sandwiches, make dessert, prep salmon…all for 20+ people. I gotta say…I will never travel again without it.
You may be wondering where the Vita-Mix fits in? It’s not just a kitchen tool and a workhorse…it’s so much more to me than just that. It’s my sous-chef and my right arm. It’s the piece of equipment that helps me plan my menu. It’s the driving force behind ‘what’s for dinner’. It made sauces, smoothies, fondue, flour, bread, nut butter, gravy and ice cream! It made liquid steak! (Cringe) My recipes are below.
The experience was not at all as I expected but more inspiring than I could have imagined. I had the opportunity to crew with Charlie for one day, and Marshall another. Learning how it feels to drive ahead of your athlete, sit and wait and be ready to feed and water them feels much like tending to livestock. It’s odd, because it takes you to the core of what sustains a human being. Hydration and nutrition become completely fundamental, something that we as American’s abuse and take for granted. Realizing that their bodies are machines that need fuel for performance, like a racecar needs fuel, is eye-opening.
So I would love to admit that I’ve staved off all bad habits of occasional chocolate or eating that extra bite just because it’s yummy, but I’ve not. I’m working on it, but the inspiration I’ve gained is in the area of physical fitness and endurance athletics. On the whole, I really get the nutrition part of healthy living. In fact, some of my friends think I’m a bit fanatic. But running alongside Marshall and having the opportunity to ask him questions about motivation, discipline and sanity was revealing to me. I hope everyone can experience something like this at some point in their lives.

RECIPES: (keep in mind these are not low fat nor low calorie as their needs are different than most people. I was being lunch lady to endurance athletes.
Banana Whole Grain Bread:
2 cups flour ground fresh from a blend of quinoa, oats, and wheat berries
3 scoops (soy) protein powder
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp salt
(blend these in large mixing bowl)
Combine the following wet ingredients in Vita-Mix container on High Speed for 15 seconds:
½ cup sugar (brown sugar works too)
2 T light olive oil (or veg or canola)
2 eggs
3 bananas
2 T soymilk
Combine the wet mixture into the dry mixture with a fork.
Pour into a prepared 9 x 5 loaf pan (spray with cooking spray), and bake 1 hour @ 350.
Macaroni N Cheese:
½ lb sharp cheddar cheese, in chunks
1 ½ cups milk (soymilk)
½ cup raw carrots
¼ cup fresh ground flour
½ block firm tofu
Salt to taste (1/4-1/2 tsp)
Place all ingredients in container. Let sauce run on High speed about 4 minutes until the pitch of the machine changes and it gets thick. Pour over cooked pasta.
Chocolate Fondue (a fav of Charlie’s!)
8 oz dark chocolate, 65% cocoa
1 cup heavy cream (not healthy, I know)
2 T butter
1 tsp vanilla
Run on High speed, using tamper until it begins to warm up. Let run 1 ½ to 2 minutes.
Serve w/fresh strawberries for dipping.
Chocolate Peanut Butter Banana Smoothie (loaded with calories for the runners)
1 avocado
4 oz dark chocolate
4 ounces whole nuts (peanuts)
1 banana
2 cups soymilk
Squeeze of honey or agave
2 scoops (soy) protein powder
1 cup ice
Place all ingredients into Vita-Mix container and run on High speed for 60 seconds, using tamper. If too thick, add more milk.
Mango-Strawberry Ice Cream
½ lb frozen mango (1/2 a bag)
½ lb frozen strawberries (1/2 a bag)
¼ cup honey, sugar or agave
1 cup soymilk
1 scoop (soy) protein powder
Place all ingredients into Vita-Mix container and run on High speed for 45 seconds using tamper.
Pumpkin Pie Smoothie
½ can plain pumpkin
¼ cup honey, sugar or agave
½ tsp pumpkin pie spice
½ package instant vanilla pudding mix (the small box)
2 scoops (soy) protein powder
1 tsp vanilla
3 T cream cheese or soy cream cheese
1 cup soymilk
1 cup ice cubes
Place all ingredients into Vita-Mix container and run on High speed for 60 seconds using tamper.
For a real “pie” feel and flavor, stop machine, add 3/4 cup of animal crackers or graham crackers to the container, replace lid and turn on variable speed 5 to mix for a few seconds.

We had a 75th birthday for my father in law this weekend, therefore we strayed from the simply Vitamix juicing we have been doing.
We used our Vitamix to make the Celebration Cheesecake and the Amaretto Peach Sorbet for his "birthday cake". Absolutely wonderful. I believe my mother in law was so amazed by the ease of use, recipe and clean up she is on her way to purchase one for herself. She was very impressed by the recipe book.

So, now that my candida cleanse is coming to a close, and I have developed much healthier eating habits, I am now starting the 3rd week on my new exercise regimen, the P90X, yes, the same one that runs those awful infomercials all the time. My hubby wanted it initially and I decided if he would drink smoothies (WITH GREENS!), then I would do the workouts too. We do not work out together (that would be grounds for divorce), but we are both doing the same program. We turned our office into the workout room.
First of all, I can tell you that this is a HARD workout. I am not a complete couch potato, but I have not had a real workout routine for years. This program kicks my butt; I can't even do a lot of the stuff, or I have to do it in a modified form (ex. I do pushups from my knees right now and pull-ups with a band). My hubby isn't a body builder either, so we are both very challenged. But I do appreciate the mottos they use - "do your best, forget the rest", "just show up and push play" and the trainer on the videos is very good.
We did a lot of measurements when we started and weighed ourselves. I swore that I would not touch the scale again until day 30 which is April 19th. I think I am typical of most women when I say that I am very critical of my body and regardless of how much my hubby insists that he sees results, I don't see it. But each day I can do a little bit more of the workout, or go lower on the pushups, or lift more weights, so even if I don't see it I know something is happening. Doing it together (but at separate times) has meant being supportive of each others' efforts: we bring each other water and after really hard workouts make each other smoothies. He has become quite the smoothie maker and actually gets upset if I run out of greens to put in his smoothie now. This is a straight meat and potatoes guy who I use to beg to eat a side salad at dinner.
P90X includes a meal plan as part of the program and guess what the first phase is??? Low Carb!!! No Sweets!!! High Protein!!! Isn't that what I just did for the past 8 weeks??!!! I'm thinking that my morning smoothie is going to be great to keep up with. I am going to make lots of veggie soups and sauce bases in my vitamix. I will need to find some non-flesh protein alternatives because, although I am not currently a vegetarian, I am not a huge meat fan either. Hello nut butters and seeds, tofu, soybeans, whatever - I like it all. Send non-flesh protein ideas my way quick!

My local paper ran a story originally published in the New York Times. In a nutshell, it said that in many cases, vegetables that are cooked can be more nutritious than raw. Their premise was some research that showed cooking helped to break open cell walls to release more nutrition.
For one, I know Vita-Mix machine processing, which was not one of the methods researched, breaks open the cell walls to release these nutrients...more than can be had by chewing. Also, when you boil vegetables, a lot of the nutrients are lost in the water and steam.
I wonder what the vegans and vegetarians think of this article.

Thor was delivered today. He’s my new 5200 black Vita-mix and he’s a beauty. Such power, such lustful aggression. I know he’s got tens of thousands of brethren out there doing the same thing for others, but I feel Thor and I have something special. It started as a blind date. My sister set us up. My career and passion has always been in food, but it took my engineering-minded sister to see the true greatness of this machine and turn me on to it. “It makes peanut butter AND ice cream,” she raved after having seen it demoed. I indulged her and even thought I understood. I had no idea. We got one for my mother’s birthday. I still had no idea. It took a one on one, hands-on experience to convert me. I was visiting my sister and of course we played with her Vita-mix. The thing that really got me was making HOT soup. I’m talking piping hot, blow-on-it-first soup! Now that’s whacky. I finally understood why people get a little upset when the Vita-mix is referred to as a blender. It’s an insult. When was the last time you saw a blender crush ice and then turn around and make perfect pureed hot soup? So, once I took the plunge and ordered this incredibly expensive piece of machinery ($600 if you want the dry container included for grinding grains), I counted the minutes until his arrival. My boyfriend was a little bemused, all be it supportive, when we turned the corner to my apartment and I saw the box announcing Thor's arrival. You would have thought it was a box of kittens. I was giddy. This was better than Christmas. When my throat hurt enough to call in sick to work the next day, I was almost glad because it gave Thor and me a chance to get properly acquainted. I watched the intro video and decided I’d make the peach ice cream and cashew butter. (I also made watermelon juice – straight up – and a smoothie with carrots, celery, orange, red grapes and cherry concentrate). The instruction booklet tells you to clean out the container before the first use, but you know how senseless passion can be. I jumped right into my first whirl with Thor using no protection. I’m not advocating this, but it happens.
Autumn is upon us and the chill is in the air...at least in Northeastern Ohio. Your nose hairs just freeze a bit in the evening dew. PERFECT time for hot delicious soups from natures abundant bounty!
So I bust out the roasting pans and turned up the oven to a toasty 400 degrees, donned the slippers and made some apricot tea. Here we go:
Butternut Squash Soup:
1 Butternut squash, roasted @ 400 degrees about 45 minutes
(spray dish with baking spray or oil lightly, cut squash in half and place cut side down in dish)
1 apple, quartered, roasted in same pan
1/2 head garlic, roasted in same pan
1 1/2 medium onions, roasted in same pan
(drizzle all of the above in a little olive oil)
Place above in Vita-Mix container with 2 cups stock (veggie or chicken), 1/4 cup molasses, salt to taste, 1 cup water (or to desired consistency), 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp pepper. Let run til nice and hot (4 min?).
To finish, turn to Variable speed 8(ish) and add 1/4 cup heavy cream, half & half or soymilk. Blend about 30 seconds and serve immediately.
WOW! Delicious!
Veggie Paninis:
I served this soup with grilled paninis made of roasted portabellos (drizzled with balsamic, olive oil, S & P), roasted red peppers, roasted onions/garlic mashed with artichoke hearts, fresh herbs, 2 T cream cheese & lemon juice, and topped with fresh garden tomato slices.
Serve all of the above with your favorite movie and fabulous company!

I have enjoyed viewing your videos and am curious if any of your raw food creations and smoothies are suitable for the Type 2 diabetic? I have been watching closely my diet for many years and have arrived at the place where types of foods and there preparation seem to be my last chance at good control of my blood sugar. I started looking at your videos to see how you used the Vita-Mix Blender and then became very interested in a raw food diet. I use very little meat in my diet now and could easily remove it entirely. I hope you may have some suggestions because I love fruit and vegetables but know that most fruits are too high in natural sugar. I am also looking into Dragon Fruit and Dried Dragon
Fruit. Do you know about it’s use in salads or smoothies.

I’m sorry to hear that you have diabetes, but am excited to hear your interest in this lifestyle. I’ve seen many diabetics decrease or stop needing insulin shots completely after adding delicious living foods to their diet. I know many people will benefit from your question. Thanks for asking!
Fruits are a valuable food for all of us, including diabetics. They are high in vitamins, phytochemicals, and fiber. The fiber allows the fruit to breakdown in our bodies at the perfect speed. When fruits are juiced and the fiber is removed from the fruit it changes the way the fruit is metabolized in our bodies. This faster assimilation can cause the blood sugar to rise too quickly, therefore diabetics should refrain from drinking fruit juices. That’s where the Vita-Mix becomes an essential part of the diabetic’s kitchen. When making fruit smoothies, the entire fruit, including the fiber is present. In it’s “whole” form, it is a very acceptable part of the diet. Adding greens to your fruit to make a “green smoothie” helps to slow the absorbtion of the fructose and decrease the chances of blood sugar elevations. The only precaution that diabetics need to take when eating fruits are to eat those that have a low glycemic index. The Glycemic Index measures how fast the food is converted to glucose. Those fruits that score a Glycemic Index below 55 are the best ones for diabetics.

Foods with GI index between 55 and 70 are consider intermediate
High Glycemic Index food have a glycemic index above 70
You can see by this list, there are plenty of fruits that diabetics can eat.
This is just a chart of the fruits, however most of the other foods that I use in the recipes in our “Transitioning to Living Cuisine” book are low glycemic, such as Nuts—GI of 15-30, Tomatoes—GI of 15 and Green Leafy Vegetables with a GI of 0-15.
Interesting that you asked about dragon fruit, also know as pitaya fruit. There have been health claims that dragon fruit helps to control glucose blood sugar levels in type 2 diabetes and some with type 1 diabetes. Dragon fruit is also high in dietary fiber and Vitamin C. I normally recommend fresh fruit rather than dried fruit, but since it’s often hard to find the fresh fruit, you may have to purchase the dried variety. Another benefit of eating dried dragon fruit is that the dried fruit has about 10x more Vitamin C than the fresh fruit. Fresh dragon fruit or dried dragon fruit both are great additions to a healthy diet. Fresh dragon fruit is best eaten by cutting the fruit in half and scooping the flesh out. They are a wonderful addition to smoothies, or just eaten by themselves or in a fruit salad.
It is also important to pay attention to the way you combine your foods. Fruits should always be eaten alone or only with greens or celery. Fruit should never be combined with fat, this includes avocado, coconut, olive oil, nuts and seeds, etc. Not only does this slow the assimilation of the sugars from the fruit, which is harmful to diabetics, it also causes unnatural fermentation, often causing a candida albicans overgrowth, which is the origin to many negative health issues.
Remember, everyone is different in how they assimilate fruit. This also changes as your body becomes healthier. You should monitor your blood sugar level to determine when it is the best time of day for you to eat fruit. The majority of the people that I have worked with find the morning hours to be the best time to consume fruit. They then eat the vegetable, nut and seed dishes for lunch and dinner. This allows for proper food combining, without having to think much about it. If you do east fruit at a meal when you will also be eating vegetables/fat in your food, it’s best to eat the fruit first, about 15-30 minutes before you eat the rest of the meal.
